We're seeking a Sous Chef to join the Dining Services team at St. Thomas University in Fredericton, New Brunswick. Reporting to the Executive Chef and responsible for supporting the Residence Dining Manager in providing culinary leadership in the planning, production, administration, and management of high-quality food and catering services for the students, faculty and guests..

Job Responsibilities

Assist in planning, directing and guiding the culinary team of in the execution of daily food service and caterings in a manner that meets and exceeds operational and financial targets, working alongside front line staff and filling in for the Executive Chef as required
Leads and monitors cooks and food service workers' adherence to all Aramark operating standards and legislated standards within the component including company policy and procedure
Remain compliant to all OH&S policies, procedures and required activities -updated safety boards, inventory on First Aid Kits, proper chemical handling, monthly safety talks etc.
Assists with onboarding, coaching, and developing culinary staff.
Assist with inventory and product ordering.
Standardizes production recipes to ensure consistent quality.
Perform other duties as assigned

Qualifications

5+ years' experience in culinary field required
2+ years' experience in leadership role required
Culinary degree or Red Seal an asset
Strong relationship building skills with clients and customers
Experience with food and labor costing
Assertive, professional, and positive with ability to lead in a stressful environment.
Must be flexible to work some evenings and weekends for special events as required.
Must be able to work independently with limited supervision
Requires occasional lifting, carrying, pushing, pulling of up to 25 lbs.

Responsibilities

Support the Executive Chef and Residence Dining Manager in planning, directing, and overseeing daily food service and catering operations, while helping meet quality, operational, and financial targets. Lead and monitor culinary staff, support onboarding and development, manage inventory and ordering, standardize recipes, and maintain compliance with company, food safety, and occupational health and safety standards.

Requirements

Requires at least five years of culinary experience and at least two years in a leadership role; a culinary degree or Red Seal certification is an asset. Candidates should have food and labor costing experience, strong relationship-building and leadership skills, flexibility for some evening and weekend events, and the ability to work independently and occasionally handle loads up to 25 pounds.
