Lucille’s Restaurant Group is seeking an experienced and strategic Purchasing Manager to lead the food and beverage program. This role is critical to ensuring consistent quality, cost control, and operational efficiency for our premium casual fine dining experience.

The Purchasing Manager will oversee the end-to-end purchasing function, manage supplier relationships, optimize supply chain, monitor restaurant inventories for positive cash flow and oversee the Central Kitchen’s role in overall purchasing program. This position requires strong negotiation skills, deep understanding of food & beverage sourcing and the ability to balance quality standards with profitability in a fast paced, multi-location restaurant group.

Key Responsibilities

Oversee purchasing for the food & beverage program of the restaurant group.
Work with the executive team to develop and implement purchasing strategies to ensure cost savings without compromising product quality and reduce waste.
Manage supplier relations, including sourcing, evaluating, onboarding and performance monitoring; negotiate contracts, pricing, terms, rebates and volume commitments to secure best value.
Lead supplier contract development, renewal, and compliance, ensuring all agreements align with company standards and food safety requirements.
Oversee the Central Kitchen role in the overall purchasing program.
Analyze purchasing data, market trends, and supplier performance to identify opportunities for improvement, cost reduction, and alternative sourcing options.
Lead and develop purchasing team.
Ensure full compliance with health regulations, food safety standards and any provincial alcohol purchasing requirements.

Qualifications & Requirements

5+ years of progressive experience in purchasing/procurement, preferably in a multi-unit restaurant group, hospitality, or foodservice environment.
Proven track record managing food & beverage purchasing, supplier negotiations, and supply chain logistics in a high-volume, quality-focused setting.
Strong understanding of restaurant operations, including central kitchen/production facilities, inventory controls, and perishable goods management.
Excellent negotiation, analytical, and problem-solving skills with a data-driven approach to cost control and vendor management.
Proficiency in inventory management software, purchasing systems and Microsoft Office/Excel.
Knowledge of Quebec foodservice market, suppliers, seasonal availability, and regulatory requirements.
Experience managing direct reports.
Ability to travel occasionally to restaurant locations and supplier facilities.
Bilingual in French and English (spoken and written) – required due to operations in Quebec.

Ce poste joue un rôle essentiel dans le maintien de la qualité, du contrôle des coûts et de l’efficacité opérationnelle qui caractérisent notre expérience de restauration haut de gamme décontractée.

Le ou la Gestionnaire des achats sera responsable de l’ensemble des activités d’approvisionnement, de la gestion des relations avec les fournisseurs, de l’optimisation de la chaîne d’approvisionnement, du suivi des inventaires des restaurants afin de favoriser une saine gestion des liquidités, ainsi que de la supervision du rôle de la cuisine centrale dans le programme global d’approvisionnement.

Ce poste exige d’excellentes compétences en négociation, une solide connaissance de l’approvisionnement en aliments et boissons ainsi que la capacité de concilier les standards de qualité et la rentabilité dans un environnement de restauration multi-établissements en constante évolution.

Principales responsabilités

Superviser les achats liés au programme d’aliments et boissons de l’ensemble du groupe de restaurants.
Collaborer avec l’équipe de direction afin d’élaborer et de mettre en œuvre des stratégies d’approvisionnement permettant de réduire les coûts sans compromettre la qualité des produits et de minimiser le gaspillage.
Gérer les relations avec les fournisseurs, incluant la recherche, l’évaluation, l’intégration et le suivi de leur performance; négocier les contrats, les prix, les modalités, les remises et les engagements de volume afin d’obtenir les meilleures conditions.
Diriger l’élaboration, le renouvellement et la conformité des contrats fournisseurs en veillant à ce que toutes les ententes respectent les normes de l’entreprise et les exigences en matière de salubrité alimentaire.
Superviser le rôle de la cuisine centrale dans le programme global d’approvisionnement.
Analyser les données d’achats, les tendances du marché et la performance des fournisseurs afin de repérer les possibilités d’amélioration, de réduction des coûts et de diversification des sources d’approvisionnement.
Encadrer, développer et mobiliser l’équipe des achats.
Assurer le respect de toutes les réglementations en matière de santé publique, de sécurité alimentaire ainsi que des exigences provinciales relatives à l’achat de boissons alcooliques.

Qualifications et exigences

Minimum de cinq (5) années d’expérience progressive en approvisionnement ou en gestion des achats, idéalement au sein d’un groupe de restaurants multiétablissements, du secteur de l’hôtellerie ou des services alimentaires.
Expérience démontrée en gestion des achats d’aliments et boissons, en négociation avec les fournisseurs et en logistique de chaîne d’approvisionnement dans un environnement à fort volume axé sur la qualité.
Excellente compréhension des opérations de restauration, y compris les cuisines centrales ou installations de production, le contrôle des inventaires et la gestion des produits périssables.
Solides aptitudes en négociation, en analyse et en résolution de problèmes, avec une approche basée sur les données pour le contrôle des coûts et la gestion des fournisseurs.
Maîtrise des logiciels de gestion des inventaires, des systèmes d’approvisionnement et de la suite Microsoft Office, particulièrement Excel.
Bonne connaissance du marché québécois des services alimentaires, des fournisseurs, de la disponibilité saisonnière des produits et des exigences réglementaires applicables.
Expérience en gestion de personnel.
Disponibilité pour effectuer occasionnellement des déplacements vers les différents établissements et sites des fournisseurs.
Bilinguisme français et anglais (oral et écrit) requis en raison des activités de l’entreprise au Québec. La connaissance de l’anglais est nécessaire et requise puisque la personne devra communiquer avec des fournisseurs et partenaires situés à l'extérieur du Québec et consulter des fiches technique disponible uniquement en anglais.
