Responsibilities

Prepare, assemble, and plate dishes in accordance with the specification sheets for each menu;
Verify the compliance and quality of cold meal preparations;
Record cooking, cooling, and thawing temperatures;
Ensure product quality (presentation, freshness, taste, etc.);
Supervise and organize staff activities;
Prepare the work schedule;
Prepare the monthly theoretical staffing requirements;
Prepare the monthly and weekly schedule based on the theoretical staffing requirements;
Train and onboard new employees;
Ensure that employees' timesheets are properly completed;
Estimate the daily needs of the team in terms of products, materials, or equipment;
Control losses and reserves as accurately as possible (waste log);
Monitor production timings;
Verify the compliance of the services provided (technical sheets / products / portion sizes...);
Complete the various HACCP documents; and
At all times, apply good hygiene and manufacturing practices, ensure that the members of the department comply with them, and report any deviation to the immediate supervisor or the Quality Manager.
Academic training in cooking, culinary arts, kitchen management, or a related field.
Minimum 3 years of experience as a Head Chef or in an equivalent position within a commercial kitchen, in the institutional catering, airline catering, or food service sector.
Proficiency in both English and French, spoken and written is required to effectively manage operational changes and follow flight instructions communicated by our airline partners.
Experience in team supervision, production planning, and quality control.

Missions

Préparer, conditionner et dresser les plats en respectant les fiches de spécifications de chaque menu ;
Vérifier la conformité et la qualité des prestations froides ;
Relever les températures de cuisson, de refroidissement et de décongélation ;
Garantir la qualité du produit (présentation, fraîcheur, goût,…) ;
Superviser et organiser les activités du personnel ;
Élaborer le planning de travail ;
Établir les théoriques mensuels ;
Planning mensuel et hebdomadaire suivant les théoriques ;
Former et intégrer les nouveaux employés ;
S’assurer que les feuilles de pointages soient bien remplies par le personnel ;
Estimer les besoins quotidiens de son équipe en produits, matériels ou équipements ;
Maîtriser au plus juste les pertes et réserves (cahier de jetés) ;
Suivi des timings de productions ;
Contrôler la conformité des prestations (fiches techniques / produits / grammages ...) ;
Remplir les différents documents HACCP ; et
Faire en tout temps les bonnes pratiques d’hygiène et de fabrication et s’assurer que les membres de son service les respectent et signaler tout écart à son superviseur immédiat ou au Responsable Qualité.

Compétences

Formation académique en cuisine, en arts culinaires, en gestion de cuisine ou dans un domaine connexe.
