Job Description
The Assistant Director of Mixology is responsible for working alongside the Director of Beverage, providing strategic direction and operational leadership across the Food & Beverage Division. This is more than just running a bar; it’s about shaping an experience, building a culture, and leading a team that delivers hospitality at the highest level.
- Train, coach, and develop colleagues on mixology techniques, beverage knowledge, equipment use, service standards, and safety protocols.
- Monitor and manage beverage costs, inventory, waste, and variances to support financial targets and operational efficiency.
- Plan, develop, implement, and oversee bar program operations to ensure profitability, consistency, and compliance with established standards.
- Foster a culture of excellence within the Food & Beverage division by promoting exceptional service, teamwork, and continuous improvement.
- Lead and support Food & Beverage colleagues and operations to deliver exceptional guest experiences and achieve departmental objectives.
- Provide operational oversight of the bar program, including inventory management, beverage controls, bar-related service tickets, colleague scheduling, and day-to-day operations.
- Develop and implement strategic initiatives for the bar program, including beverage menu development, seasonal offerings, promotions, and innovative mixology concepts.
- Collaborate closely with Food & Beverage leadership and other departments to ensure the bar program aligns with overall restaurant and property goals.
- Support the Director of Beverage in developing and executing the overall beverage program and creative strategy, while assuming leadership responsibilities in their absence or when offsite.
- Demonstrate strong leadership, communication, and guest service skills, along with extensive knowledge of mixology and beverage trends, with the ability to innovate and adapt to evolving guest preferences and market trends.
- Play a key role in the overall success of the Food & Beverage division by ensuring operational practices meet or exceed established standards and contribute to the overall objectives of the property.
Qualifications
- An experienced mixologist with a proven track record of leadership and operational success.
- Passionate about hospitality, guest experience, and the details that make people come back.
- Deeply connected to (or curious about) Toronto’s evolving dining scene, beverage culture and food & beverage trends.
- Financially savvy, results-driven, and confident making data-informed decisions.

- The salary range for this position is $70,320 - $87,316. Our salary ranges are determined by job and level. Within the range, individual compensation is determined by job-related skills and knowledge, relevant experience and/or work location
